Allergen Law 2014
From the 13th December 2014, all Food Business Operators (FBOs) supplying food within the EU are required to declare allergen information for all food sold to consumers.
Also from January 2015 as part of the School Food Plan a new set of Food based standards regulations becomes mandatory for all food served in all maintained schools and within new academies and free schools. (Those that were founded after 2010 and before June 2014.)
There are 14 allergens that must be declared when requested in order to be legally compliant with the EU Food Information for Consumers Regulations (EU FIC) they are:
1 - Cereals containing Gluten
2 - Crustaceans and products thereof
3 - Eggs and products thereof
4 - Fish and products thereof
5 - Peanuts and products thereof
6 - Soybeans and products thereof
7 - Milk and products thereof (including lactose)
8 - Nuts
9 - Celery and products thereof
10 - Mustard and products thereof
11 - Sesame seeds and products thereof
12 - Sulphur dioxide and sulphites at concentrations of more than 10 mg/kg or 10 mg/litre
13 - Lupin and products thereof 14 - Molluscs and products thereof
All our unit managers and unit staff have now been fully trained on the new legislations, and their requirements that they must follow. Recipes have been produced for all menu items, including hospitality, which identifies all known 14 allergens within each dish. There will be a clear consumer notice that should anyone require to know what allergens are within each dish we will have within our kitchens a full recipe file and monitoring sign off sheet to demonstrate that we are being fully compliant and this can be checked by anyone requesting to know what is within the dishes. This is held by the Catering Managers on site, the Operations Managers will also carry a copy.

As our commitment to quality and legal compliance is paramount we have taken the decision to brand our menus throughout the business. In short this requires all menus \ recipes to be analysed for allergen and nutritional information, we believe that not only will this opportunity improve our offering but also create consistency throughout.
